The history and the farm
The Rossi Farm is located in the area once ruled by Countess Matilde of Canossa at the foot of the Reggio Hills, the home of Parmigiano Reggiano cheese. It is a family-run farm that has been making this acclaimed cheese for many generations, handling every phase of production: from raising the cows and producing the milk to processing and marketing the finished product.

How Parmigiano Reggiano is produced on the Rossi farm…
...from the crops to the cattle...
The animals are born and raised right on the farm in large open spaces that respect their natural biological rhythms and well-being. They are fed all year with fodder and cereals that come from organic farms certified by the A.I.A.B. (Italian Association of Organic Farmers); this type of systematic feeding obtains milk that, once processed, will provide a cheese product that maintains the same properties consistently throughout the year.
...from production to sales.
The raw milk is obtained by milking some one hundred cows twice a day. Depending on the time of year, this provides enough raw material to make about six wheels of cheese a day. It takes approximately 600 kilos of milk to produce just one wheel of cheese weighing about 38 kg. As soon as the cows have been milked, the milk is brought to the "casello", or cheese facility, to be made into cheese by means of time-honored craft-based methods (ISO 9001:2000 certified) and then "cared for" for another two years during the ripening process before being released onto the market. In order to bring out all the product's excellent quality, we also personally handle all the packaging operations. The cheese is strictly cut by hand and vacuum-sealed under cool conditions in order to avoid subjecting it to variations in temperature. It's hard to describe in just a few words all the work involved in producing authentic Parmigiano Reggiano; suffice to say we continue to work with passion and commitment in keeping with the traditional techniques. And the result of all these efforts is "Parmigiano Reggiano della Fattoria Rossi"...

In our company store you'll find Parmigiano Reggiano as well as softer, less ripened cheeses, butter, processed meats and wines that we produce ourselves, as well as balsamic vinegar, fruit preserves and olive oil produced by the selected small farms with which we collaborate.
